A fabulous fathers day weekend

Morning friends! How was your weekend?

I hope you were fortunate to have wonderful weather! Our forecast originally called for rain and thundershowers but miraculously until very late yesterday night the rain held off so we were able to enjoy most of our weekend outdoors.

On Saturday, I ran a bunch of errands including a stop at the grocery store, the butcher and the greenhouse. Back at home I planted a second batch of lettuce which should by my estimates be ready for picking once our first batch is finished. We try to cycle our planting so that we have fresh produce on a consistent basis and reduce our quantity of food waste. This week I’m also planning to plant a second batch of potatoes so I can double my harvest in the fall. After finishing boring adult responsibilities like tidying and cleaning we took the afternoon off and enjoyed cooling off in the pool. The water was a frigid 72 degrees. Mer and I were both wimps and wanted to call it quits but Margs was having such a great time that we dealt with it and eventually adjusted. Guys, 72 is cold cold cold.

Later that evening while Mer was playing with baby girl I got going on putting together Mer’s Father’s Day gift. We’re not big on material gifts so, we usually opt to gift each other consumables or make each other a little something special.

As a special treat I made Mer this strawberry trifle. It’s probably his favorite dessert and so I picked up all the goodies I needed to put it together while at the grocery store in the morning. If you like rich creamy desserts then I’m sure you’ll enjoy this. To keep costs low I sometimes skip the Mascarpone, make my own angel food cake and buy any berries that are on sale.  Any type of berry works really really well with this recipe.

On Sunday we headed to swimming lessons then zoomed back to our place to put baby down for a nap and to start preparing for a huge cookout in the afternoon. I’d called a bunch of our friends and asked them if they’d be interested in celebrating Father’s Day together and so we spent the afternoon and evening lounging in the backyard, grilling up good food, celebrating dads and feasting on roasted marshmallows!
